This pasta, dear reader, has been a staple in our household for probably that last 6 years. My husband’s mom gave it to us one day & we were hooked. I make this dish for many occasions. Just for the two of us as a meal, for parties {our recent Halloween party no less}, family get togethers… You name it, it works! It’s always a hit. I promise.
And, although the best of tomato season has left town, you can still find some pretty good ones right now {& year round if you look hard enough}. Although I stick with the season’s {local} bounty… Tomatoes are a weakness!
Penne Pasta with Tomatoes, Basil & Feta

Ingredients:
1/2 cup extra virgin olive oil
6 garlic cloves, peeled, flattened with knife
16oz penne pasta
5-6 large tomatoes, seeded & chopped {I only seed about half of each tomato}
1 {heaping} cup crumbled feta
1/2 cup chopped herbs, basil & oregano
salt & pepper
Directions:
Heat oil over medium-high heat. Add garlic & sautee for 3 minutes, or until browned all over. Pour garlic & oil into a small bowl & let stand for 30 minutes.
Cook pasta according to package. Drain, rinse under cold water & transfer to a large bowl. Strain oil over pasta, discarding garlic. Add tomatoes, cheese & herbs to pasta. Toss to coat. Season with salt & pepper to taste.
