Creating the perfect bite is actually an art. From piling chips with the correct ratio of beans, lettuce and salsa in that huge burrito bowl at Chipotle to the fancy fish dish with roasted root vegetables and puree… It’s an art damn it. And this toast does not disappoint in the perfect-bite-every-time category. Meet your new favorite way to eat avocado toast. Never had it? Well, you’re in for a treat. It’s super easy, delicious, and versatile. I love this combination. At first I was eating just plain ol’ avocado toast which, in it’s own right, is freaking delicious. Then, I added a tomato. Um… hello! And then there’s the saying “throw an egg on it”. Well, OK!
Adjust this “recipe” any way you like it. Add a touch of garlic or if you’re looking to kill a vampire go all in. Tomatoes, or not your thing. An entire avocado… Hey, it’s your toast after all. I like my eggs a teensy bit crispy on the edges, but you could add scrambled or a soft/hard boiled egg. It’s all up to you.
Avocado Toast with tomatoes and an egg
Ingredients:
good bread, sliced
garlic clove
avocado, sliced or scooped out for smashing
good quality extra virgin olive oil
flaky sea salt
red pepper flakes
tomatoes (I prefer juicy heirlooms), sliced
egg
What to do:
Toast that bread. And when I say toast, get the ends a little crispy so the center of the bread is nice and firm – no one likes soft toast. And good bread is good bread. No substitutes.
Meanwhile, fry your egg. Add a little oil to a pan over medium to low heat. Crack the egg in the pan and let it sit until the edges are beginning to crisp. You don’t want the yolk to cook on the bottom, but the whites should firm up. Flip carefully and let it sit for up to a minute, no longer or you’ll cook the yolk…. You also have the option of cooking eggs any other way you like. Just time your toast to the egg cooking process.
Once your toast is ready, peel and cut your garlic clove in half. Rub the toast with the cut side of the garlic. Add your avocado slices, or smash it on top of the toast. Lightly sprinkle the avocado with a pinch of salt and pepper flakes. Drizzle a touch of olive oil on top.
I like to add the tomatoes on top of the toast and cut my egg up on the plate, adding as I go. Perfect bite. Every. Time.
Seriously, I could’ve licked my plate clean… but for photographing purposes I chose not to.
