But this one is a bit different. This little frozen, juicy number is for adults. It’s your typical mojito, but frozen on a stick.

I came across this idea somewhere on Pinterest {gotta love Pinterest!} & I adapted it, tweaked it a bit & knew that I had created a powerful miracle on a stick. I think you can pretty much take any drink you love, pour it in a mold & freeze. Liquor doesn’t freeze, but the other liquids do. So make sure your drink has plenty of other juices that will freeze!
Watermelon Mojito Popsicles

Ingredients:
4 cups of watermelon
1/2 cup lime juice
3 TBS honey, or agave
1/4+ cup fresh mint
scant 1/2 cup light rum*
1/4 cup club soda
Directions:
Place watermelon in a blender. Blend on high until smooth. Pour into a sieve & reserve the drained liquid. Toss remaining bits in sieve.
Pour watermelon liquid back into blender along with lime juice, honey & mint. Blend on high until mint has broken up into small pieces.
Add rum & soda. Mix once more.
If necessary, pour mixture into a bowl with a pour spout for easy pouring. Pour mixture into molds** & freeze. If using traditional molds, freezing at least 5 hours to over night is best.
*I added more alcohol than what recipes typically call for… oops.
** In search of popsicle molds this year, I knew I wanted the traditional, old fashioned molds. You know, the kind where you have an actual wooden popsicle stick? I was really hesitant to give into the Zoku “craze”. Really? You need a separate freezing container? Are people really just looking to throw their money away! ~ Well, not really. That little freezing container is genius! It lets you freeze up to 3 popsicles at a time in just 10 minutes… There is no waiting for hours & hours. This product is a must if you have kids or are having a party that includes popsicles. If you run out & someone wants another, no worries! Just pour into the mold & wait 10 minutes. Happy kid = happy parent, right?!
Zoku also sells a stand for the popsicles, but I just wrapped mine in foil & placed them in a freezer bag until I was ready to set them out. But, I do recommend buying the extra sticks.
