You will have one happy family after you make these deeply rich oatmeal bars {or cookies} from Bake or Break. I made them last week & they’ve disappeared already. Cherries & dark chocolate coated in a yummy blanket of oatmeal… you can’t go wrong! My two little ones who have never had chocolate before just didn’t know what to think of this delicious goodness mommy had placed upon them!!! {But their chocolate intake was Limited. Note the capital ‘l’! I ate the majority of that chocolate for them. What are mommies for?!} Not to mention the hubby was very pleased to have these cooling on the kitchen counter when he came home from work!
Dark Chocolate Chunk and Dried Cherry Oatmeal Cookies
{Bake or Break}
Ingredients:
1 cup butter
1 cup brown sugar, firmly packed
2 eggs
1 & 1/2 teaspoons vanilla extract
1 & 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
3 cups oats
1 cup dried cherries
8 ounces semi-sweet chocolate chunks
Directions:
Preheat oven to 350°.
Beat butter & brown sugar together until smooth. Add eggs one at a time, mixing after each addition. Add vanilla.
In a separate bowl, whisk together flour, baking soda, cinnamon, &
salt. Gradually add to the butter mixture just until combined. Do not
overmix. Stir in oats, cherries, & chocolate.
Drop by tablespoonfuls onto lined or lightly greased baking sheets.
Bake for 10 to 12 minutes, or until bottom edges are lightly browned.
Cool on pans for a few minutes, then remove to wire racks to cool
completely.
Makes about 4 dozen cookies.
{These may also be made into bar cookies. Press the dough into a lightly greased 13″x 9″ baking pan. Bake for about 30 minutes.}
As you can see, the quantity of chocolate chunks compared to cherries is much greater! I think next time I will add a bit more cherries. They add a nice pop of flavor & tartness that is unexpected. And be prepared to work for these bad boys. The batter is so thick. I couldn’t have done it without my favorite new kitchen tool.
This is one tough cookie {no pun intended. Or was it?}. I love that it’s a slanted spoon, it’s a spatula, the color, durability… Recommend! Better than my other rubber spatulas from William-Sonoma.
