For our ice cream/dinosaur celebration, I wanted to have homemade popsicles. Who doesn’t love a good popsicle on a hot summer day?! I know my husband does. For our trip to Isle of Palms, I ordered several things from that cute little bakery I told you about. While there, David just couldn’t help himself. He asked for their blueberry~lemon sugar pop. And on our next visit to pick up the boys’ cupcakes, he bought two more he loved them so much! Inspiration hit me… along with my husband’s pleading for me to make these!
Blueberry~Lemon Popsicle

Ingredients:
1 1/2 pint blueberries
scant 1/2 cup sugar {add more to taste}
1 teaspoon lemon zest
1/2 cup fresh lemon juice
small plastic cups
popsicle sticks
Directions:
Combine all ingredients in blender. Blend on high until all blueberries have been incorporated. Add more lemon juice if you like them tart. Or more sugar for something sweeter. All according to taste! Blend again. If necessary, strain mixture into a bowl with lip {for easy pouring}.
Place plastic cups inside muffin pan. Or, on top of a cutting board that will fit in your freezer, if you are not worried about spilling over. Pour mixture into each cup.
Place pan in freezer. After 30 minutes, remove popsicle molds & insert sticks. Place back in freezer.
Let freeze for several hours until hard. Overnight is best.
Once frozen, carefully remove the cups from the blueberry popsicles. It’s pretty easy if you wiggle the cups a bit & then slide off.
