If I had my little way, I’d eat peaches every day…

Earlier this week I posted a recipe for what I called, and I quote, “The Best salad I have made so far this year”… But on Tuesday night after that post, my inner “chef” was yelling at me: “Wow, Sarah! You should really slow down with the proclamations. The year, or summer for that matter, isn’t over yet…”
Although, that recipe from earlier in the week is still my favorite so far, this recipe I am about to give you will definitely make your taste buds go into overdrive. The sweet peaches, crunchy almonds, peppery greens, robust blue, tangy vinaigrette… Ugh. It’s a close, close second for me.
Adding on to this for supper, I had the hubs light up the grill & we threw on a couple of eggplants from our garden. It was light, delicious & filling!

 Peach & Blue Cheese Salad with Plum Vinaigrette
{Bon Appetite}

Ingredients:

2 black plums, halved, pitted, chopped

1/2 cup extra-virgin olive oil

4 teaspoons ume plum vinegar or red wine vinegar

Kosher salt, freshly ground pepper

4 large handfuls mixed greens (such as arugula & frisée)

4 nectarines or peaches, halved, pitted, cut into eighths

8 ounces firm blue cheese sliced

1/2 cup Marcona almonds

Directions:
Bring plums & 3/4cup of water to a boil in a small saucepan. Reduce heat to medium~high & simmer, stirring occasionally & mashing plums with the back of a spoon, until plums have completely broken down, about 15 minutes.
Pour plum mixture through a fine-mesh sieve set over a small bowl, pressing on solids to extract as much purée as possible; discard solids in sieve. Let purée cool.
Add oil, vinegar, & 2 Tbsp. water to purée; whisk to blend. Season dressing to taste with salt & pepper. {DO AHEAD: Dressing can be made 1 week ahead. Cover & chill.}
Divide greens among plates. Scatter nectarines, cheese, & almonds over, dividing equally, & drizzle some of dressing over. Season with salt & pepper.

side notes:
• I used 4 1/2 to 5 teaspoons red wine vinegar {because it’s what I always have on hand}
• baby arugula & mache
• peaches, not nectarines – just a personal preference
• Great Hill Blue is what I went for & crumbled into chunks
