Do you have a green thumb? Having a green thumb does not come naturally for me. It’s a work in progress that I think is coming along rather nicely, as of late! For the past several years I have grown my own herbs such as basil, cilantro, parsley, chives, thyme, oregano, etc… It’s the best! Pay $4 for one plant that keeps you saturated in herbal bliss, or pay $4 for a small container of basil that will last two days? Hmm… tough question!
But this past summer we took it a step further… We had eggplant, tomatoes, peppers & the usual array of herbs overflowing with goodness. I am telling you ~ growing your own tomatoes pays. They are the juiciest, sweetest, little red wonders of the world. I’ve never tasted anything this sweet from the store.
And now that fall is here, it’s time to dig up, resoil, & plant something new. For us it’s kale, kale, kale with a few specks of lettuces, broccoli & cauliflower. I am just itching for the first picking!
So, to welcome the fall/winter veggies to our tables, I thought I would share a wonderful, healthy & quick recipe with you for kale chips. Some how this has become a little trend online! Not sure how/why. Maybe it’s because of their nutrients? Or, maybe it is because of how expensive they are! I’m sorry, does that say $8… per 2oz bag!!!
Crispy Kale Chips

Ingredients:
1 bunch kale
1 tablespoon extra virgin olive oil
sea salt
Directions:
Preheat oven to 275º. Tear kale from the ribs & cut/tear into 2inch pieces. In a medium bowl combine kale, oil & salt {to taste}. Lay kale across a baking sheet in a single layer, as much as possible.
Bake for 20 minutes, stir/flip once or twice during the baking process.
