This bread is absolutely my favorite to make. It’s become a nice little staple for my family as of late & I don’t think it’s going anywhere. I wasn’t a huge fan of pumpkin before. I have given it a try here & there, always to be overwhelmed, or underwhelmed, by the flavor. What gives?
Well, search no more. I have found the perfect combination of pumpkin, pecans & oats to satisfy your craving! And a wonderful little foodie blog… Oh I love her sweet little foodie magic! With her inspiration, & that of a few others, I may have my own little stuffed acorn squash experiment arriving soon…
Pumpkin Oat Bread

Ingredients:
¾ cup old-fashioned oats
1 cup whole wheat pastry flour
1 teaspoon baking soda
½ teaspoon salt
½ teaspoon nutmeg
½ teaspoon ginger
1 teaspoon cinnamon
½ cup crushed pecans or walnuts {I used pecans}
1 cup pumpkin puree {Farmers Market organic is my choice}
¾ cup maple syrup {Grade B is always best because the flavor does not cook out}
⅓ cup pecan or walnut oil {I used walnut because I couldn’t find pecan oil}
2 eggs
oatmeal & nuts to top
Directions:
Preheat oven to 350˚ & generously butter/oil a 8 or 9″ loaf pan.
In a food
processor, pulse oats until almost flour- I still like little pieces of
oats left. Pour into a large bowl & add wheat flour, spices, baking
soda, & nuts.
In a separate
bowl, whisk together pumpkin puree, maple syrup, oil, & two eggs {you can also use melted
butter or coconut oil. The nut oil brings out the nutty flavors}. Pour into dry ingredients. Stir until just
combined. Do not over mix.
Pour into prepared
pan & sprinkle with oats & nuts. Bake for 50-60 minutes. Top should
spring back lightly & when a knife is entered, it should come out
clean. Let cool and slice!

This pumpkin bread will make anyone a lover of pumpkin! It’s just that good… I may try putting this into muffin form with a streusel topping next time.
