Talk about a cold weather kind of meal. This pasta is warm, cozy, filling {without the heavy feeling}, good for you, & absolutely delicious! The warmth of the butternut squash, the sweetness from the caramelized onions & bitter~sweet kale… all topped with a peppery Pecorino. You just can’t go wrong.
I found this recipe here & adapted it a bit. I also used a new pasta that I will take any day over plain whole wheat pasta. A gluten free penne made from quinoa & brown rice. I have only tried the DeBoles brand & plan on giving others a try. I’ll let you know what I find!
Roasted Butternut Squash & Kale Penne Pasta

Roasted Butternut Squash
Ingredients:
1 medium butternut squash, peeled, seeded & cut into 1-inch cubes
1 tbsp. olive oil
salt & pepper
Directions:
Preheat oven to 400 degrees. Place squash onto baking sheet, drizzle squash with olive oil & sprinkle with salt & pepper. Toss to coat. Bake for 40 minutes, or until tender.
Caramelized Onions
Ingredients:
1 tbsp. olive oil
2 white onions {medium size} thinly sliced
salt & pepper
Directions:
Heat oil in a large skillet over low heat. Add onions & a bit of salt. Cook until completely caramelized, stirring occasionally at first & more often as onions begin to brown, 30 minutes to over an hour. Season with freshly ground pepper.
Penne with Butternut Squash & Kale
Ingredients:
1 tbsp. olive oil
1 clove garlic, minced
1 bunch kale, stem removed & torn into bite-sized pieces
1/3 c. white wine
8 oz. whole-wheat penne, cooked according to package {this penne is what I used}

caramelized onions
salt & pepper to taste
shaved Parmesan or Pecorino cheese
Directions:
Heat oil in large skillet. Add garlic & cook 30 seconds. Add kale & saute 1 minute, then add wine to skillet. Continue to cook until kale has wilted, about 2-3 minutes. Stir in penne, squash, & onions; cook until heated through, about 2-3 minutes more. Season with salt & pepper. Serve with shaved cheese.

Hope y’all had a fantastic Thanksgiving, or maybe celebrated all that you are thankful for where ever you may be! Now, it’s time to move on to another wonderful holiday! And to get things started we are snuggling with our boys, sipping on some hot chocolate & breaking out the Elf On The Shelf book. And then tomorrow morning… Their elves will have arrived! I cannot wait to see how my two react. Although they’re only 2 years old, I think they’ll still have fun finding their elves in funny situations. I’ll keep you posted on their whereabouts 😉
I am also starting a new tradition with my lil’ family ~ 25 days of Christmas! I can’t wait for that either. Books, fun movie nights, giving back to the fire department, pj’s, cars, more books…. it will be fun! Eventually this will all dwindle down into Christmas books & movies {re~wrapped each year}. But for now, I’m going to have some fun {cheap fun while I still can} with my monkeys!
