As I sit here at 8:30PM typing this post I have breakfast in the oven, dishes washing, clothes waiting to be dried, kids put to bed, hubby off to grad school & all with somewhat of a clean house. Sigh. It takes a lot of work to be a mom, doesn’t it? I wish there were more hours in the day to just, I don’t know, do anything! Work on Etsy a little bit more, maybe? {I promise, it’s coming. I just need 3 more of me!}
With the exhaustion & mind boggling days, I look for oldie but goody recipes that are quick & healthy. So, for the mom’s needing a quick & delicious yet, healthy meal, or the late workers who have no time to whip up a gourmet meal every night, this is for you.
Really, this for anybody…
Creamy Shrimp & Tomato Chowder
{Better Homes & Gardens}
Ingredients:
2 stalks celery, chopped (1 cup)
1 medium onion, chopped (1/2 cup)
1 Tbsp. olive oil
2 14.5 oz. cans diced tomatoes with basil, garlic, and oregano, undrained
8 oz. medium peeled cooked shrimp*
1/2 cup whipping cream
1/2 cup water
Ground Black Pepper
Slivered fresh basil
Focaccia wedges
Directions:
In a large saucepan cook celery and onion in hot oil just until tender. Stir in tomatoes; heat through. Add shrimp, whipping cream, and water. Cook over medium heat just until hot. Season to taste with pepper.
Ladle chowder into bowls; top with basil. Serve with focaccia wedges. Serves 4
*As for the shrimp, I never buy it cooked. I do it myself thanks to James Beard. I love Beard’s American Cookery cookbook. There are so many wonderful tips, explanations of techniques, recipes, etc. It’s an encyclopedia for your kitchen really. In American Cookery, Beard thoroughly explains how to cook shrimp to perfection. He also talks about how shrimp are typically under seasoned & that you should use a good amount of salt ~
Bring a large pot of generously salted water to a boil. Add shrimp. Bring back to a boil & cook 3-4 minutes. Larger shrimp weigh on the 4 minute side. Drain immediately.
This is very, very simple & could possibly save you a few bucks in the grocery store when buying shrimp. Just cook shrimp at the same time as the veggies & you’re good to go!
