if it weren’t for you & Facebook, I would have never known that Friday was National S’mores Day. And this would have never have prompted me to make s’mores on a stick. 20 of them to be exact… And I would have never known about National Chocolate Day, Chocolate & Caramel Day, Ice Cream Month, Peach Ice Cream Day, Chocolate Ice Cream Day, etc… Because of you, my sweet tooth is on over load & just cannot take anymore! I need a cleansing!
But, in honor of National S’mores Day, I couldn’t resist the urge. I wanted something different, easy to eat, but still tastes like a s’more. Meet your new best friend by the camp fire this fall…
There’s virtually no mess to clean up {if eaten fast enough on a hot summer day}! Easy for little two year olds & one bite for big “kids”! We even packed up the rest & took them to the DeKalb airport/playground for the boys. Watching bi-planes come in & out, swinging with a s’mores stick… what could be better?!
S’mores on a Stick
Ingredients:
a few tablespoons coconut oil
2 bars bittersweet/semisweet chocolate {mine were 3.5oz each}, chopped
graham crackers
marshmallows {large}
lollipop sticks
Do not use too much oil here or your chocolate will be a little water~like. I had to add more chocolate that I had on hand {semisweet}. But it was wonderful! And gave me more than enough to make more later on…
Directions:
Push lollipop sticks through all marshmallows. Set aside on plate.
Place graham crackers in a ziplock bag {I used 4, but this leaves a ton left over ~ OK for me because I can make more}. Using a rolling pin, your hands, back of a spoon, etc. crumble the crackers. You can do as little or as much as you’d like here. Transfer to a wide bowl.
In a double boiler {or sauce pan with glass bowl large enough to fit over top}, bring a small amount of water to boil. In top pot, or glass bowl, add your coconut oil & let melt, if needed. Then add chocolate. Stir until half of chocolate has melted. Remove from heat & continue to stir until melted completely.
Dip marshmallow in chocolate. Shake off excess back into pot.
Dip chocolate covered marshmallow in crumbled crackers. I used my hands to pat the cracker bits on a bit better to the chocolate. Place back on plate.
Repeat with all marshmallows.
After marshmallows are covered eat immediately, or place in fridge until ready to dig in. They travel well in a container, too, after being in the fridge.
I hope you enjoy this fun little snack! If you’re children are old enough, this could be a fun way to get them in the kitchen helping. Maybe crushing the crackers could release some energy… Or, this could be a nice surprise when they open their lunch box at school this week {ice pack included}!
